Turning Juicing Pulp Into Bread
I always feel so wasteful when I get done juicing and have to throw away the pulp.
So this week after juicing beets, carrots, apples and strawberries I thought I would try to use the pulp to make a quick bread.
Quick Breads are breads that don't need yeast or rising. They are usually more dense.
Recipe from from from Food.com with a few alterations from myself
Quick Bread
Ingredients:
1 1/2 cups pulp
1/2 cup butter
3/4 cup honey
3 eggs beaten
1 tsp vanilla
1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup chopped pecans
1/2 cup raisins (optional)
1/2 teaspoon nutmeg
Directions:
1. Beat together butter and honey, then add eggs, vanilla and pulp.
2. Sift dry ingredients together and add to mixture from step 1.
3. Add nuts
4. Bake in a greased 9" loaf pan at 350 F for 40-45 minutes.
